Don’t you sometimes just have those cravings that you absolutely HAVE to eat those PANCKAES? Yea me too, especially the kind where they stack up in piles, swimming in maple syrup and powered with sugar. Pancakes? or the dream summer body? Decisions, decisions, decisions…

Don’t worry, I’ve got cha! Remember those super healthy vegan pancake on Instagram? I’ve played around the recipe and here is my Clair-Proved gluten free, dairy free, bloat free, yummy blue berry banana pancake dealio.

What you need:

2 ripe bananas

1 egg

hand full of blueberries

a pinch of baking soda

a pinch of cinnamon

any oil you have

Maple syrup or honey

I also added vegan cream cheese (I just bought it and desperately wanting to try it… on anything)

How to do it:

Smash the bananas until smooth, add egg, and mix them together.

Then add a pinch of cinnamon and baking powder into the mixture.

 

Heat up the pan, I would prefer using butter but I didn’t have any so I used olive oil instead. Any oil or spray would do the magic.

Drizzle the mixtures into the pan, top off with some fresh blue berries. Let them sit and sizzle until you see it bubbles on top, then flippp!

Depends on you, bacon or fresh fruit are great choices! I have some mangos so that’s what I had.
